Chilled Watermelon Salad

Quantity:  Serves 6


Amount Unit Ingredient Procedure

2 lb. Large seedless watermelon      Dice

2 Medium Seedless cucumbers Dice

¾ Ounce Pecorino cheese or Manchego or hard cheese of


Dice or lg. grated curl

2 Sprigs Fresh mint Top as garnish

1 Ounce Aged balsamic vinegar

or champagne vinegar Blend together with whisk or shake in a jar

1 Ounce Extra Virgin Olive Oil


1 In a mixing bowl, add diced watermelon, diced cucumbers, one julienned mint sprig, and diced cheese.

2 Top with one pinch each of salt and pepper.

3 Add most of the oil and balsamic, mix well, and move to serving bowl.

4 Drizzle with remaining oil and balsamic, garnish with the remaining mint sprig, and serve.


Salt & pepper to taste
